Sake making at Hatsumomidi in Yamaguchi prefecture

We experienced sake brewing at Hatsumomidi Sake Brewery in Yamaguchi Prefecture.

Hatsumomidi Sake Brewery Co., Ltd., located in Shunan City, Yamaguchi Prefecture (formerly Tokuyama City), is a historic sake brewery rooted in the local area. Founded in 1819 (Bunsei 2), it boasts a history of over 200 years. While treasuring the local climate and culture, they preserve the traditions of sake while also incorporating modern sensibilities.

Taking advantage of the rich natural environment of Yamaguchi Prefecture, they brew sake using locally grown rice and pure water. Their main brand is “Harada".

This is a very rare sake brewery in which the majority of the sake brewers are women.

This is a sake brewery that brews in small batches and does four-season brewing.

The attached drinking space is also very nice!

This time, I was able to experience various processes, from steaming the rice, transporting the steamed rice to tanks for preparation, managing the yeast starter, washing the rice, bottling, and labeling.

After the work, we went to a stylish drinking area and enjoyed Tokushima specialties such as fugu sashimi and duck hotpot, as well as all-you-can-drink Harada’s various sakes!

It was a wonderful time and experience.
