Sake brewery tour: Takijiman in Mie Prefecture
I had an opportunity to visit Takijiman in Mie Prefecture.
Let me write about the summary of the sake brewery.

Takijiman’s standard lineup is handcrafted by a small group of elite brewers under the motto of “Sake that makes one person want to drink a hundred cups more than a hundred people want to drink one cup".
It got best award at the 2012 Omachi Summit, a gold medal at the International Wine Challenge (IWC), and was used as the toast and in-dinner drink at the Ise-Shima Summit.
It won Gold medal award at IWC 2022 and Gold medal at National sake appraisal 2022 this year.
Mr. Sugimoto told us that there is a key point in adding water, and we found out about the importance of finding the best timing to add water.
During the tasting, we were served sake made with different rice varieties such as Hattannishiki, Omachi, and Yamadanishiki.
All the sake were wonderful, showing the characteristics of the rice.
